Fantastic fish skin
Fish skin is a fantastic product. I personally like it very much deep fried as a snack and sometimes I use it as a garnish on top of a fish dish. The skin is partially made from collagen which is ammonic acid (protein) and can be processed from gelatine. The skin has two layers, the outer layer holds the mucosal and the inner layer holds the scales. The fish skin is 4-7 % of the fish. Some Icelandic companies have sold fish skin over seas for gelatine production. Gelatine made from skin of cold-water fishes is thought to be good thickening substance and is used in the pharmaceutical industry.

A lot of fish skin is unfortunately thrown away. Here in Iceland some companies are developing one thing and another regarding fish skin. Few things are well ahead in the production. Special band aids have been maid to heal bad wounds, dog food from dried fish skin, popped fish skin snacks and sauce or dressing from fermented fish skin.

Kerecis is an Icelandic company which does experiments, develops and manufactures high technique healing products made from fish skin and fish oil. A former fish processing industry is now a disinfected laboratory. The company’s first products were foot cream and skin cream for dry skin. Now they set the bar high, they are going to sell their newest products to hospitals all over the world. These products, that are being developed, are substances that help heal sore and chronic wounds, due to increasing diabetes and bedsores. In America3, 5 million surgeries are done every year where the possibility is to use these products. There is a great hop tied to this manufacture.
Sauces or dressings made from fish skin
Brimberg is an Icelandic company which is developing dressings from fermented fish skin. These dressings are like soya sauce or oriental sauces, due to the ingredients and knowledge fromJapan. One of the main objectives of this project is to increase the value of the fish which would other wise manufacture fish meal. The fish sauce is produced with fermentation of salted fish; the sauce is a clear, brownish liquid with a strange sent. The fish sauce and its products give food the fifth taste (J. umami), especially due to high contents of glutamine. The marked for the fish sauce has grown and not just inAsiabut all over the world with changed diet.
Popped fish skin and snacks for dogs
Students in the Fisheries department in the University of Akureyri have been developing snacks made from fish skin. The snack is delicious and truly wholesome. Dried fish skin is also an ideal snack for dogs. It’s chewy when it’s dried and dogs do like it.
Akureyri is a town in the north of Iceland. The population there is about 17.000 people.
Recipes For Salmon Skin Snack (Salmon or trout skin)
Pour oil in a pot and heat well. Cut the fish skin in strips, put sugar and salt on it. (it is also good to season it with lemon pepper or other spices of your choice). Role the stripes in the wheat and deep fry it in the oil until it is crispy and golden. Dry it on a paper, eat and enjoy!
It is also good to toast fish skin in your toaster, also the fish skin from the dried fish after you have eaten it.
