800 g pollock, remove the skin and bones
10 cloves of garlic
½ cup finely cut fresh basil
4-6 sweet potatoes
2 tsp shredded parmesan cheese
2 Italian cheeses with sundried tomatoes
½ jar black olives
splash of double cream
pepper and salt
Boil the potatoes, bring the fish to a boil and put the pot aside. Place a pinch of butter into a pot and fry the finely chopped onion over low temperature until it becomes soft. Add finely sliced garlic and let it soften. Next add a splash of cream and the shredded cheese; stir until the cheese melts into the mixture. Then add potatoes and season; mash with a potato masher. Add the fish and the finely chopped basil and mash together. Let it simmer over low/medium heat and stir steadily, season to taste. Peel the sweet potatoes, boil and mash and place on a plate under the mashed fish. Spread finely cut olives as well as the shredded parmesan. Serve with home baked brown bread with plenty of butter or Grissini breadsticks.
