Healthy Diet and Powerful Monday Coconut Butter Smoothie.

I love coconut butter. Sometimes i use coconut butter instead of coconut oil. Why? Because it has a richer flavor and a better texture than coconut oil.  Make your own, homemade coconut butter is ok. Its hard to find brand coconut butter  in many places.

Coconut butter is made with whole coconut flesh, and its better to have a good work processor. A 16 ounces of dried coconut made over 2 cups and its will take about 10 minutes on a full blast, after that its slightly warm. Pour it into a clean jar and let cool.As it cools it will harden. Coconut butter is wonderful spread on toast, stirred into a creamy hot oatmeal and into smoothies.

Healthy Diet and Powerful Monday Coconut Butter Smoothie, good start for a lovely week.
Serves 2

1 cup mango, frozen
1 cup almond milk
1 cup of organic pinapple juice
1 – 2 tablespoon coconut butter
1 tablespoon cashew nuts
1 fresh pear
A pinch of cinnamon

Put all in a powerful blender until smooth and creamy.
