Fish skin is a fantastic product. I personally like it very much deep fried as a snack and sometimes I use it as a garnish on top of a fish dish. The skin is partially made from collagen which is ammonic acid (protein) and can be processed from gelatine. The skin has two layers, the outer layer holds the mucosal and the inner layer holds the scales. The fish skin is 4-7 % of the fish. Some Icelandic companies have sold fish skin over seas for gelatine production. Gelatine made from skin of cold-water fishes is thought to be good thickening substance and is used in the pharmaceutical industry.
