Even though Pollock has been regarded as an inferior fish in Britain, it goes by more than fifty names. The Tandoor is as Cylindrical clay oven from India, usually used for cooking over wooden fire or gas. The oven becomes immensely hot, as the temperature can approach 600°c, but the clay can also be used to bake bread. This cooking method comes closest to cooking over an open fire without actually cooking over an open fire.
Tandoori Pollock recipes – Raita Recipe.
salt
¼ tsp saffron powder
1 tsp cumin, crushed in a mortar and pestle
1 tsp coriander seeds, crushed in a mortar and pestle
3 cloves of garlic, grated with a medium Microplane grater
2 cm fresh ginger root, grated with a medium Microplane grater
1 tsp red food coloring
2 – 3 pollock fillets cut into pieces
3 dl sour milk (sifted through a coffee filter overnight)
Juice from 1 lemon and rind grated with the finest Microplane grater
Mix all the ingredients. Add the fish to the mixture and store in a closed container in the refrigerator overnight. Thread the pollock on to skewers, red and green peppers between them. Bake in the tandoor oven for 4-6 minutes or on the barbecue for 10-12 minutes.
Raita recipe
Salt the cucumbers and let them stand in a sieve for 12-20 minutes. Rinse and blend with the yogurt and season to taste. The sauce can easily be made the night before.
1 container natural yogurt
1 finely chopped cucumber, core removed
½ tsp Maldon sea salt
½ tsp black pepper
½ tsp cumin seeds, roasted and bruised with a pestle and mortar
½ tsp garlic, finely chopped
Naan bread
Mix all the ingredients and knead the dough into 4-8 balls, flatten them with your hands and bake in the tandoor oven. It is also possible to bake the bread in a hot oven at 220°C or use a pan. If you are daring it is also possible to use the barbecue.

1 tsp raw sugar (Demerara)
200 g flour
¼ tsp salt
½ tsp baking powder
1 tbsp oil
4-6 tbsp ab-milk (sour milk)
